Our lands, more than 100 hectares of vineyards, olive groves, cereal-fields and grazing, spread on the hills facing San Gimignano. The biological ox-breeding, of strictly SELECTED CHIANINA breed, is a peculiarity of the farm. The origins of this valuable breed date back to the time of Etruscan. The origins of this valuable breed date back to the time of Etruscan. It was reared in the Valdichiana area and used at first for the farm work, as portrayed in small bronzes and Roman bas-reliefs. Afterwards, thanks to its tenderness and succulent tastiness, it has become the protagonist of the typical Tuscan cuisine. In our farm we have re-discovered the value of coupling tradition and health, rearing our cattle with biological systems and food (directly produced in our farm). From oxen of CHIANINA breed we get the famous "FIORENTINA" steak, good boiled and braised meat, roasts and stews; and here, as a guest of our Agriturismo, you can taste and buy them (in the opening direct selling company-shop ). The genuineness of our wines comes from the vineyards: strict pruning, low yield, natural manuring with organic soil, and BIOLOGICAL TREATMENT with total respect for nature. The unique characteristics of our wine are guaranteed by a careful handmade selection of the bunches in the harvesting stage and by the grapes working in the cellar, where tradition and modern technology perfectly merge. From the grapes of unique vine Vernaccia di San Gimignano, we get the excellent white wine VERNACCIA DI SAN GIMIGNANO "LE MANDORLE" DOCG, with a fresh and immediate blending and a fruity and palatable drink. From the red grapes of Sangiovese, Canaiolo, Ciliegiolo and Malvasia (traditional Tuscan vines) we get the famous CHIANTI COLLI SENESI DOCG, ruby coloured, robust and harmonious, with an intense scent of red fruits and violets. The EXTRAVERGINE OLIVE OIL is taken from the first cold pressing of olives, strictly hand-picked and selected, coming from the BIOLOGICAL growing of Correggiolo, Moraiolo and Leccino (all traditional Tuscan olive trees).
